Moist Mango Cake


Delicious, soft, and Moist Eggless Mango cake ever prepared in my kitchen. Mango cake reminds me of a famous pastry shop ‘Pastaleria’ in the Panjim, the heart of the city of my beautiful state of Goa. And I always have been looking for recipes to replicate it. I am happy this recipe is very close it that.

 

Ingredients

 

250 gms All-purpose flour or Maida

100 gms salted butter

1 tbs powdered sugar (Optional)

1 tsp Baking powder

½ tsp baking soda

½ tsp vanilla extract

1 cup Mango Pulp

1 tin Milkmaid

 

Procedure

 

Mix Butter along with powdered sugar until smooth.

Add Milkmaid to the mixture.

Sieve all-purpose flour, baking powder, baking soda into it and mix gradually until all well combined.

Add vanilla extract followed by Mango pulp.

Combine well.

Grease a baking dish with flour and parchment paper.

Pour the batter into it. Tap the baking dish on the kitchen platform to remove any air bubbles before baking.

Bake at 180 degrees Celsius for 45min.

 

Tips and Notes

 

Kindly watch-out for the baking capacity or oven heat of your oven and adjust the baking time accordingly
