Pav Bhaji

Pav Bhaji is an Indian delicacy famous in Mumbai, Maharashtra. It is also known as Bombay Pav Bhaji. This dish is now served everywhere else being a popular Indian Cuisine.  It consists of thick vegetable curry relished with Soft Pav(bread) which are generously spread with butter and are toasted golden brown. It is a good variety of vegetable curry that includes an assortment of vegetables making it healthy though butter makes it junk food.

It is an enjoyable main dish for any parties or get -together as it’s easy to prepare in large qualities and is loved by all.

Here is the recipe.

Ingredients

2-3 medium-size potatoes

2 large tomatoes

1 large red Onion

1 cup cauliflower florets

1 medium-size carrot

½ cup green peas (frozen or fresh)

½ cup green capsicum

1/4th cup beetroot

2 tsp Ginger garlic paste

1 ½ tsp turmeric powder

1 tsp red chili powder

2 tablespoon readymade Pav bhaji powder

Salt to taste

1/4th cup freshly chopped coriander

½ tsp Jeera Coriander powder

1 tbsp Oil

2 tbsp butter

Butter and Pav for serving

 

Procedure

Gather all the vegetables and wash them thoroughly with warm water and cut them into small pieces.

Transfer Potatoes, cauliflower, beetroot, carrot and green peas to a pressure cooker, adding required amount of water, salt and cook over medium flame for 2 whistles.

Turn off the flame and wait until the pressure releases naturally.

Now gently mash the pressure cooked veggies with a potato masher until little chunky texture.

In a Pan heat oil and butter on a medium flame. Add finely chopped onion. Once it turns translucent add the ginger garlic paste to it and sauté well.

Add finely chopped capsicum, tomatoes to it.

Add salt to taste. Adding salt at this stage helps the tomatoes get mushy faster.

Now add all the seasoning namely turmeric, chili powder, Jeera Coriander powder, and Pav Bhaji powder.

Stir and cook for a minute until its combined well.

Add the mashed vegetables to it. Mix well.

Now again use the potato masher and mash the bhaji once more for the authentic mushy texture.

Garnish with fresh coriander and butter.

Serve hot with butter toasted Pav (Bread), finely chopped raw onion, and a slice of lemon.

Tips and Notes

Adding Salt immediately after adding tomatoes help to cook tomatoes faster than

usual.

Pav Bhaji is a good dish to serve a large group of people as it’s a full heavy meal

by itself.

Kashmiri chili powder can be used to enhance the colour of the Pav bhaji.

If using fresh peas , need to soak the peas in water overnight and then pressured cooked

along with the other veggies the next day.
