Toasted Bread with Avocado spread and Mushroom topping



Bread has been a food we enjoy eating anytime with anything being a Goan. And off-late Sourdough bread is loved and relished by us too hence we end up various recipes with bread once a week at least. 

This week it has been lightly toasted sliced sourdough bread with homemade Avocado spread topped with button mushrooms tossed in butter garlic and curry powder which is a popularly used ingredient in South East Asia. Curry powder gives a nice punch to the topping as against the mild flavors of the avocado spread.

This is an amazing recipe that can be a satisfying brunch or a dinner meal.

This can be replicated with store-bought slices of bread.

Ingredients

 

2 Large Sourdough Bread Slices / Any bread slices

1 tsp salted butter for pan toasting

 

For the Avocado spread

1 ripe Avocado

2-3 tbsp sour cream

Salt to taste

1 pod of garlic

1/4th tsp pepper powder

 

For the tossed mushroom

1 pack of white button mushrooms

2 pods of garlic finely chopped

½ Onion sliced thin

Salt to taste

½ tsp curry powder

½ tsp white pepper powder

1 tsp salted butter

½ tsp olive oil

Fresh coriander for garnish.

 

 

 

Procedure

 

In a mixer add avocado flesh along with sour cream, garlic, and blend to a smooth paste. 

Add salt, pepper, mix it well and keep it aside.

 

In a flat bottom, pan tip in some butter, olive oil, finely chopped garlic and toss it well.

Add sliced onion. Toss it until transparent. 

Tip in the sliced white button mushrooms.

Sprinkle the salt, pepper, and curry powder.

Mix it until cooked and till all the water dried up.

 

Take each slice of bread and spread butter on it and toast it on both sides on a heated Tava or Pan.

Spread the avocado mix on it.

Top it with the mushroom mixture.

Garnish with fresh coriander.

 

Tips and Notes

 

These delicious bread toast can be topped with grated cheese as well making it even yummier.

 

Good to make use of the leftover bread if not freshly baked or bought bread.
