Whole Grilled Fish

  

Whole Grilled Fish with simple salad is a satisfying no-carb meal on our weekly menu.

After a lot of experiments with different fish marination, this is the best sauce put together to use for White snapper /Red Snapper/Tilapia.

Here is the recipe.

 

Ingredients

 

1 whole White Snapper/ Red Snapper

 

For the Marination Sauce

 

1 tbsp Oyster Sauce

1 tbsp Dark Soya sauce

5 cloves of Garlic finely chopped

1tsp raw sugar

1/4th tsp white pepper

1 tsp freshly squeezed lime

½ green chilly finely chopped

1 tbsp olive oil

 

Fresh coriander 

fresh basil for the garnish.

 

Procedure

 

Wash the whole fish thoroughly well. 

Place the fish on a chopping board and score it by making vertical cuts along the length of the fish from head to tail. 

Turn the fish and repeat the same on the other side.

Stir all the sauce ingredients together in a bowl.

Keep the fish on an aluminum foil and massage it with the sauce filling the scored part with the sauce as well. Cover the foil over the fish such that it doesn’t touch the fish top and allows it to cook well once covered rather than sticking to the foil.

 

Grill the fish in the foil placing it on the baking tray for 15-20 minutes depending upon the size of the fish. 

Open the foil and let it get the grilled coating on top so also the sauces thicken up a little.

 

If the cuts or the scored parts have shrunk a bit then it means the flesh is cooked.

 

Remove the fish out of the oven and garnish it with fresh coriander and sweet basil finely chopped.

 

Enjoy the fresh bake with simple onion tomato salad sprinkled with salt and lemon juice.


Tips and Notes

 

We have spread the whole sauce once for all and grilled the fish, but it can be poured in installments taking a gap in between the grilling duration as well.
