Oven baked Aloo Gobi

Here we come with our most favorite recipe of Oven-baked Aloo Gobi in which the veggies are baked using minimal oil which gives it a lovely light crusty coating with some little gravy tossing at the end making it a full meal recipe to be eaten with rotis or phulkas too.

Ingredients

 

1 small head of Cauliflower

1 medium-size potato

 

Spices for the Marination

½ tsp turmeric powder

½ tsp cumin-coriander powder

½ tsp Kashmiri red chilly powder

1/4th tsp garam masala powder

½ tsp ginger garlic paste

1 tsp olive oil

Salt

 

1 medium-size onion sliced

 ½ tomato finely chopped

1 Slit green chilly

3-4 Curry leaves

½ tsp turmeric powder

½ tsp cumin-coriander powder

½ tsp olive oil

1/4th cup water

 

Salt to taste

Fresh coriander for garnish

 

Procedure

 

Chop the cauliflower into small florets and put in a large bowl.

Chop the potatoes into small cubes and add to the bowl.

 

In a small bowl. Add the spices for marination of cauliflower florets and potatoes and mix well until well tossed to coat the veggies evenly.

 

Now Transfer these marinated cauliflowers and potatoes to an oven tray lined with silver foil or parchment paper whichever is available.

 

bake it for 15-20 minutes at 180 degrees Celcius. Turn the veggies after 10minutes.

 

Once done take them out and keep them aside.

 

While the baking process is on, take a non-stick wok.

Add oil to it. Tip in the slices of onion, slit green chilly and curry leaves.

 

Once the onion starts turning transparent add turmeric powder, cumin-coriander powder and mix it well.

Add the chopped tomatoes and sprinkle the salt.

Add water and cover and cook for 2-3 minutes.

Take 1/4th to half of this mix and set it aside on a plate to cool.

Grind it into a thin paste.

 

At this stage add the baked veggies to the tossed onion mix followed by the ground paste.mix well until well combined.

 

Check for salt, garnish with coriander leaves.

Serve hot with rotis or phulkas

 Tips and Notes

 

This recipe tastes awesome mainly because of the crusty veggies lightly coated with semi gravy for having with Roti making it a full meal. But if you do not wish to do that than can skip the grinding step and just toss the veggies after grilling and serve too.
