During these tough times when many of us, including me being away have not met our mothers for a long time, some little effort to appreciate and be thankful for her presence in our lives can bring some smiles and make our day with beautiful memories with our loving Mom.
I am blessed to have my mom and mother in law who are my pillars of strength and I wish to thank them both for being by my side always and pray for their good health and happiness. Lots of love Mummy and Mamma.
Panacotta is a very creamy Italian dessert that will be loved by all in the family.

Ingredients
2 cups (400 gms)
whipping cream
2 cup full cream milk
3 ½ tsp powdered
gelatin(Unflavoured)
1/2 cup raw sugar
Pinch of salt
1 tsp Vanilla
Extract
½ cup Raspberries
1/3rd cup strawberries
1/3rd cup raw sugar
Procedure
In a vessel add the full cream milk followed by the gelatin powder
(unflavoured) mix it well till the powder is mixed in well with the milk.
Now stir it on low flame till gelatin powder is melted well with no
granules to be noticed. Do not boil the milk. Now add sugar and stir it until
it melts too without boiling the milk. If the milk reaches the boiling stage switch
off the gas and stir.
Once both Gelatin and Sugar are melted and the milk seems smooth remove
it from the heat and let it rest for 5 minutes. Thereafter add vanilla extract,
heavy whipping cream, and a pinch of salt to it.
Mix it well.
Oil the Ramekins or serving cups lightly with oil spray wiping the excess
oil with a kitchen tissue.
Pour this mix into the Ramekins or dessert cups. Cover it with cling wrap
and refrigerate it for 4-5 hours or overnight.
Now to make the berry
syrup,heat a pan. Add roughly chopped raspberries, strawberries. Tip in sugar.
Stir it. Let the sugar melt and juices from the berries well incorporated to
make a lovely syrup. Once it thickens turn the gas off.
Pour it while serving
the Panacotta or add it in the dessert cups after the dessert is refrigerated
for a good 4-5 hours and can directly serve it.
This is a good dessert which can be prepared ahead of time and served to guests or family on special occasions or get-together.
