Prawn Zinger Parcels

Ingredients

For the Dough

1 cup warm water

3 tsp instant dry yeast

3 cup bread flour 

2 tsp Salt

2tsp Garlic powder

2 tsp Oil

Water as much required.

 

For the Filling

2 cloves Garlic 

1 tbsp salted butter

½ tsp Turmeric powder

½ tsp Kashmiri red chilly powder

½ tsp Garam masala

Pinch of dried Kasuri methi

Salt to taste

7-8 Medium size Prawns (De shelled and Deveined)

2 tsp Thousand island dressing 

 

Rice flour 

Mozerella Cheese grated

1 tbsp butter for brushing

 

Procedure

In a wide bowl pour in flour, salt, sugar, garlic powder. Mix well so that the salt is well mixed with flour. Now make a well in between and add instant dry yeast along with warm water. Mix it all well.

The mixture will seem to be sticky but once you continue to kneed until a smooth dough is formed it will be ok. If need be use a little more flour. Apply olive oil around the dough. Let it rest for an hour to 1.5hours. Cover the bowl with a kitchen towel.

Until the dough is resting we can prepare the filling.

Take a flat bottom pan. Add butter. Once the butter melts add the garlic, turmeric powder, Kashmiri red chilly powder, garam masala, Kasuri methi, salt.

Now add the prawns cleaned and pre-marinated with salt and turmeric powder.

Let the prawns cook well with the spices. Once cooked well turn off the gas. Add the thousand island dressing, mix well and set it aside to cool down.

Now punch the resting dough which should be double in size. Make small equal-sized balls and using rice flour to coat the balls, roll each one into round disks. 



Fold one side of the disk to its center and repeat this with the rest of the 2 sides forming an uneven triangle. Tap the ends with little water to keep them folded well. 

At the center spread ½ tsp thousand island dressing, add the prawn mixture to it sprinkle some grated mozzarella cheese. Now gather the three ends to the center and make a nice zinger parcel. Make sure the center gathered part is also tapped with little wet hands to make sure they don’t open up while baking. 

Lastly, brush the prawn zinger parcels with melted butter while the final rise happens for another 10-15min placing them on the baking tray over a baking sheet.


Bake them at 180 degrees Celcius for 15-20 minutes. Once ready and out of the oven can brush them lightly with butter if need be.
