Fagla Rava Fry (Spine gourd / Kantola semolina coated fry).

Fagla Konak Konak Avadtta???? (Who out there likes Fagla ?) Popularly known as Spine gourd or Kantola is such a wonderful vegetable.

I got introduced to it only a few years ago and getting them often here in Singapore has been overwhelming. 

Rava fry is the most commonly used way of shallow frying veggies in Goa may it be potatoes, onion, ridge guard, cauliflower, mushrooms, and the list does not end. 

Here is Fagla Rava fry. It can serve as an accompaniment with food or can also be served as a starter.

 

Do try this out they taste so crisp and delicious. Have it when warm.

Ingredients

 

3 Big spine gourd or Kantola (We call it Fagla in Konkani)

½ tsp red chilly powder

1 tsp turmeric powder

Coconut oil for shallow fry

Semolina to coat

Salt

 

Procedure 

 

Wash the spine gourd thoroughly and pat them dry.

Make very thin round slices using a knife or a slicer whichever is convenient. We use a knife. 

Marinate these slices with turmeric, chilly powder, salt, and let them rest for 15minutes.

 

Heat a skillet and sprinkle 1 tsp of coconut oil.

 

Now coat each slice of spine gourd in the semolina on both sides and spread the slices covering the whole skillet. 

Sprinkle ½ tsp more oil over the slices or Fodi as we call in Konkani.

Also, sprinkle a dash of water on the slices.

Cover with lid and let it cook for 5-7minutes covered.

After 5-7 minutes uncover the skillet and turn the slices letting the other side cook well for another 5-7 minutes covering with a lid.

Now open the lid and let it get a crusty coating getting cooked for another 5minutes.

 

Overall one-skillet full of these delicious ‘Fagla Rava Fry (Spine gourd / Kantola rava fry takes 20 minutes but it does not take even a few seconds to polish them off. Hence repeat the frying process until all the slices are done and ready to be gobbled up.


 Notes and Tips

 

Can also add some turmeric, chili powder, or garam masala powder to the semolina which is used for coating the slices of the spine gourd. Gives a slightly different flavor.
