Baingan Bharta

Baingan Bharta (Roasted Eggplant /Brinjal mash) is what it’s popularly known as and we Goans call it Vaingyache Bhart in Konkani. In Goa, it is made differently than this version which is more known to people worldwide. 

Delicious mains to have with hot roti or chapati.

Ingredients


1 ½ medium size onion

½ medium size tomato

1 Roasted Baingan/Eggplant

½ tsp turmeric powder

2 cloves of garlic finely chopped

1 tsp Kashmiri red chilly powder

½ green chilly finely chopped

½ tsp coriander powder 

Fresh coriander for garnish

1 tbsp oil for cooking

Salt to taste

 

Procedure 

 

Wash the Baingan/ Eggplant and wipe with a clean kitchen towel. Poke holes to it at least 4-5 at different sides of it. Apply 1-2 drops of coconut oil and roast it well.

 

In a flat bottom vessel heat oil.

Add finely chopped garlic and green chilly.

Toss it until the raw smell of garlic goes away.

Now add finely chopped onions. Mix till they turn transparent. 

Add chopped tomatoes followed by Salt, coriander powder, turmeric powder, and red chilly powder.

Once it cooks for 5 minutes and turns mushy.

Now mash the roasted Baingan/Eggplant cleaning the blacked part well. Add this Baingan mash to the cooked onion mixture.

Mix well. Check for the salt at this stage and add more if needed.

Cook for another 5 minutes on low flame.  

Garnish with freshly chopped coriander and serve hot with rotis or Chapatis.
