This recipe holds special memories for me. The idea to prepare these toasties
struck my mom and we (me and my brother) loved them a lot since then. She would
grill them in our toaster, which she had received as a prize in one of the many
cookery contests she had won. Feels so good to go down the memory lane and
cherish those little moments of joy we found in little things!
Coming back to the Palak paneer toasties. These formed part of our tiffin snack
whenever palak paneer was prepared the previous day. I still recollect how
eager I would be to eat these toasties packed in my snack box during the school
recess time.
The fact is that the leftover is inevitable may it be our moms cooking anything
or us but when the leftover food can turn out into something appetizing like
this then why not have leftovers ??

Ingredients
Palak Paneer
Bread slices
Pure ghee/butter
White sesame seeds (Til)
Procedure
Take a slice of Palak Paneer and spread
the palak panner on the slice. Do make thinner pieces of the paneer so that it
does not fall off while getting toasted. Sprinkle half a tsp white sesame seeds
on the topping so that it sticks to the palak panner mixture.
Toast the bread slice on both the sides,
adding generous amount of ghee or butter.
Serve hot.
